What "running hot or cold" actually means
An oven does not hold one steady temperature. It cycles. The heat climbs past your setting, shuts off, drifts down, then fires again. A healthy oven keeps that swing tight enough that food does not notice. Drift means the swing got wide, or the whole range shifted up or down. Cause one: calibration and how you use the oven
Start with the cheapest possibility. Many ovens have a calibration offset in the settings menu that someone may have nudged years ago. Check your manual for how to view it. Preheat habits matter too. Most beeps sound before the walls and racks are actually up to temperature, so give it another ten minutes on baking days. Dark pans, crowded racks, and foil laid on the bottom all change results without anything being broken. In Denver, altitude changes bake times and rise on its own. If the oven only misbehaves on one recipe, the oven may be fine.
Cause two: the door, the gasket, and lost air
