The National Fire Protection Agency sets the codes and standards that all Commercial Cooking Operations must adhere to. More information can be found in NFPA 96, Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations.
Per NFPA 96 there are four approved methods of cleaning:
The frequency of cleanings highly depends on the volume of cooking operations. Standards are set by the National and Local Fire Protection Agency.
Regular cleaning and maintenance of your Range Hood will improve airflow and efficiency however it is not a requirement per the National Fire Protection Agency. Depending on the frequency of cooking cleaning is recommended on a quarterly basis.
Per manufacturers' recommendations, properly installed systems that receive regular maintenance typically have a life span of 15 years, after which, a new system is recommended.
